
Vegetarian Rice Paper Rolls with a Chilli Lime Dipping Sauce
Here's a great little idea for something really healthy Vegetarian Rice Paper Rolls with a Chilli Lime Dipping Sauce.
Serve them just as a snack, as an appitiser at a dinner party or make a light lunch out of them.
They are quick, easy and mega healthy

Rice Paper Rolls

1 Pack Thai Rice Paper

1 stalk Celery
-
1 Carrot
-
Snow Pea Sprouts
-
1 Bunch Coriander
-
1 Lebanese Cucumber
-
1 long red chilli, deseeded and finely chopped

3 or 4 sprigs of Coriander from the bunch roughly chopped
Method
* Dipping Sauce
It may be best with this recipe to make the dipping sauce first, allowing the combination of flavours to infuse. To make the dipping sauce, simply combine all dipping sauce ingredients except the coriander and stir together in a bowl. Pour into a 120ml dipping dish, ready for service. Add the roughly chopped coriander just before service
Rice Paper Rolls
Cut the Celery, Carrot and Cucumber into Julienne (fine sticks). Keep all ingredients separate.
Soak the rice paper sheets in warm water, (only do one or two at a time) until they go soft and flexible. Lay them out flat on a bench. Place onto the centre rice paper a sprig of coriander, 3 or 4 sticks of carrot, cucmber, celery and snow pea sprouts in a horizontal bundle. Wrap the ingredients in the rice paper folding from the bottom, then the sides and rolling away from you into a small cylinder shape.
Arrange on a platter with the dipping sauce. Decorate with some of the coriander and serve |
