Chocolate Self-saucing Puddings

The winter months are certainly upon us. (That is if you are lucky enough to live in Aus or elsewhere in the southern hemisphere). What a great time for chocolate pudding, or is there any time that isn't. This is a very easy to make, tasty self saucing chocolate pudding made in 5 minutes prep time plus ½ – 1 minute cook time in the microwave. I make this one when I want something quick and easy, or when anyone feels like having a tasty chocolate dessert

Ingredients

 

Pudding

·                    50g unsalted butter

·                    120g soft brown sugar

·                    1 egg

·                    150g self raising flour

·                    30g cocoa

·                    120ml milk

·                    1tsp vanilla extract

 

Sauce

·                    50g caster sugar

·                    25g soft brown sugar

·                    15g cocoa

·                    200ml boiling water

 

 

Method

 

  1. Cream the butter and sugar together
  2. Add the egg and vanilla and beat well
  3. Fold in the sifted flour and cocoa, alternately with milk and mix briefly
  4. Divide in equal quantities into 4 250ml soufflé dishes
  5. For the sauce, mix the caster sugar, soft brown sugar and cocoa well together
  6. Sprinkle equally over the 4 puddings, then gently pour over equal amounts of the boiling water
  7. Cook the puddings individually in the microwave for approximately 30 seconds or until the pudding feels firm on top.
  8. Let cool for a few minutes and serve with some fresh double cream

·        Alternate to the microwave, puddings can be baked in the oven a pre-heated 180ºC oven for 15-20minutes

 

Makes 4 large or 6 smaller puddings

(for smaller serves divide puddings into 6 170ml soufflé dishes)
